Well, what to do you say when you know you and your family are going to be social distancing for the long haul? We need FOOD AND WINE, of course!
I want my family to look back at this time and say we enjoyed our time together. Yeah, I know, if we don't drive each other crazy. My husband and I want to teach our children that when you are given lemons, you make lemonade. We are not going to dwell on the negative (but we can complain about it sometimes - you need to vent besides those walks around the neighborhood;). Our family decided to create a journal about our cooking AND our wine pairings during this time.
Our first meal..............
My helper, Luciana, is an excellent meatball maker! I think she likes to be my helper because she wants to be the first one to be the test taster :)
shiitake stems, celery, carrots,
Parmesan Reggiano rind
& chicken broth
We reduced the broth down to a wonderful flavor of shiitakes, Parmesan Reggiano and chicken stock but there was not enough. We cheated with store bought tortellini - next time we will make our own.
We all agreed to make this dinner again.
